These keto waffles are based on the popular keto chaffles recipe. Chaffles usually use cheese and eggs as its base, but aren't ideal for dairy free folks. I got the idea to use coconut cream instead of cream cheese or cheese from my cream cheese pie crust recipe. I've made it several times using coconut cream and find it's a great substitute!

These keto waffles couldn't be easier as you only need to mix the ingredients and cook in the waffle maker for a couple of minutes! How easy is that!

What kind of waffles can I make?

There are many different kinds of waffles you could make using this recipe as a base, but here I’ll introduce 5 different ways you can make dairy free low carb waffles.

Vanilla Belgian Waffle

These are your typical waffles that you’ll find at any supermarket. They remind me of Eggos. Pour sugar free maple syrup, keto chocolate frosting or some homemade coconut whipped cream on top and you’re good to go.

Use the savory low carb waffle recipe and add your favourite ingredients. For this specific waffle sandwich, I used eggs, small sausages, tomato and cabbage slices.

Remember all the hype about avocado toasts? You can do the same with keto waffles! Just serve them with whatever ingredients you like, like avocado or sunny side up eggs.

Make Loaded Low Carb Waffles

Now this can be a sweet or savory idea. Load them up with your favourite toppings and you'll have a complete meal that's super filling. In this case, I used the low carb pumpkin waffles and loaded them with pumpkin whipped cream, which is just dairy free whipped cream with pumpkin puree, melted chocolate and sliced almonds.

Make Traditional Keto Waffles

Use either the churros waffle or the Belgian waffles and serve them with some keto-friendly maple syrup and some coconut whipped cream.

Which Waffle Maker do you Recommend?

Since this batter works anywhere, you have the option to use a waffle maker or other appliances like donut makers, griddles or pancakes.

If you want to make mini waffles, I recommend getting the Dash mini waffle maker. It comes in a variety of colours and is pretty inexpensive. If you'd like to make normal sized waffles, I recommend getting the Cuisinart Belgian waffle maker. It's a full-size waffle, so you'd need to double the recipe and it would be like making 4 mini waffles in one giant Belgian waffle.

How to Make Low Carb Waffles

Before you start making your low carb waffles, there are four important tips to follow to ensure your keto waffles come out perfect.

  1. Make sure to oil your waffle maker before putting the batter in or else it WILL stick.
  2. Don’t put too much batter into the waffle maker or the batter will overflow as it cooks.
  3. Cook them longer. 2-3 minutes per waffle should do the trick.
  4. Carefully remove them from the waffle maker.

As long as you follow those tricks, you'll end up with the perfect waffles recipe!

Since these gluten free waffles are so easy to make, there aren't many steps required to make these. All you have to do is plug in your waffle maker and let it come to full heat. Mix all of the ingredients together in one bowl. Brush some oil all over the waffle maker and pour half of the gluten free waffle batter into the waffle maker.

Note that the batter tends to be a little bit more sticky than when you make it with cheese. Spread the batter around evenly around the waffle maker and close it.

Let it cook for 2-3 minutes. The longer you let it cook, the crispier the waffles will become.

Finally, just carefully remove the waffle from the waffle maker and it's ready to serve!

Can these waffles be made egg free?

Yes, absolutely! I've tried to make them with a flax egg and it was a huge success. If you'd like to use a flax egg instead of the egg, simply put 1 tbsp of flax seed meal and 2.5 tbsp of water in a small bowl and let it rest for 5 minutes. You'll end up with a thick paste. You can use that instead of the one egg.

Is the xanthan gum necessary?

Honestly, I really recommend it. I tried to make the waffles without it and because there is no cheese in them to bind the batter, they tend to fall apart when you try to take them out of the waffle maker.

Do I need a waffle maker to make these?

Nope, not at all. You can either make them in a frying pan and make traditional low carb pancakes, or you can use a griddle, donut maker, waffle maker, sandwich maker, and so on. Any machine with a non-stick grill will work.

I personally used a Dash mini waffle maker and a full-size waffle maker.

How do you store these keto waffles?

I simply add them to a ziplock bag and leave them in the fridge. You can also store them in a Tupperware container.

How Long Do These Keto Waffles Last?

If you're only make 1 recipe, which makes 2 waffles, they'll only last a day! Haha, but no seriously, they'll last about 5 days in the fridge. I suggest eating them the first couple of days though as they taste much more fresh.

Are these keto waffles freezer friendly?

Yes, of course! Individually wrap them in Saran Wrap and then place them into a ziploc bag to freeze. They should last 1-2 months in the freezer.

To thaw them, simply microwave about 30 seconds and then throw them in a toaster for a few minutes to crisp up.

Do these keto waffles taste like coconut?

Not really. And this is coming from someone who hates coconut. You’re only using 1 tablespoon of coconut cream so it won’t have that much coconut flavor. Note, if you make the nut free version using coconut flour, it WILL taste like coconut.

Can these keto waffles be made nut free?

Yes! You’ll need to use coconut flour instead of almond flour. I've only tested this recipe with coconut flour so am not too sure about other nut free flours.

Instead of 6 tablespoons of almond flour, you'll need to use 2 tablespoons of coconut flour. For the pumpkin one, instead of 3 tablespoons of almond flour, you'll need to use 1 tablespoon of coconut flour.

Instructions

  • No matter which waffle you decide to make, the steps are the same. Except for the churros waffle, the two ingredients for the coating will be added to the waffle once it's cooked!

  • Mix all of the waffle ingredients in one bowl. The batter is a little thick and sticky, especially if you use flax eggs.

  • Plug in your mini waffle maker and let it warm up completely.

  • Brush a good amount of oil on the lower and upper grills.

  • Separate your waffle batter in two. Take one half and spread it around the lower grill. It's kind of sticky, so make sure it spreads evenly. Close the waffle maker and let cook for 2-3 minutes. The longer it cooks, the crisper it gets.

  • Carefully remove the waffle from the waffle maker and add the last half of the batter. Repeat the steps.

    You'll now have two waffles to eat!

Notes

*Note 1 - Nut Free Version

Instead of 6 tablespoons of almond flour, use 2 tablespoons of coconut flour. For the pumpkin waffle, instead of 3 tablespoons of almond flour, use 1 tablespoon of coconut flour.

*Note 2 - Sweeteners

I use keto brown sugar for these waffles. I like to use Sukrin Gold, but you can use Lakanto Golden too.

*Note 3 - Egg Free Version

Use a flax egg instead of one egg. Use 1 tbsp flax seed meal with 2.5 tablespoon water. Mix together in a small bowl and let it sit 5 minutes. It'll become a thick paste that you can then use instead of the egg.
